Epic beetroot hummus with homemade flat breads.
You can’t beat a beet for a good wholesome taste, and beetroot hummus is a great little snack for any occasion. This winter it is proving to be an incredibly popular starter in the Matty G Cooks home delivery food boxes.
Here is what you will need for the hummus.
2 beetroots roasted & peeled (you can also boil them if you like)
1 tsp toasted cumin seeds
1 clove of garlic
1tbs tahini (Sesame paste)
Juice of 1 lemon
Salt to taste
a drizzle of olive oil
a pinch of salt
Pre-heat your oven to 180°c
Take 2 large beetroots & place them in a roasting dish with a pinch of salt and a drizzle of olive oil. Cover them with tin foil & roast for about 1 hour or until soft.
When the beets are cooked carefully peel off the outer skin. I usually let them cool for a few minutes so I don’t burn myself.
Then take all of your ready ingredients & blend all together & season to taste.
If you fancy it, add some mixed seeds and herbs on top. I think coriander goes really well with this dish.
For the Homemade Flat breads
100g stone ground organic bread flour
100g stoneground organic wholemeal flour
130g water
4g salt
Mix well for a few minutes until the dough becomes less sticky, and let it rest for 10 minutes.
Pre heat a non stick pan or a griddle pan.
Roll out flat breads on a lightly floured surface into a nice round shape as thin as possible & cook in a hot dry pan. Once they are lightly golden brown on each side they will be ready to eat.
